Today the kids were able to enjoy a meal prepared by the chefs. A demonstration was done to show the children how to prepare this meal at home in their own kitchen. The meal was fried catfish, potato salad and green salad. For dessert they enjoyed a homemade banana pudding. Everyone wanted seconds.

Dairy DAY!!!
The kids listened to a presentation on how dairy was important to their everyday health. After the presentation they began preparing their meals containing milk, cheese and other dairy products. Homemade ice-cream was made by hand shaking and also home made macaroni and cheese was prepared by the children. Added the meal was grilled cheese sandwiches and homemade tomato soup.

Pancakes Anyone
Today the kids learned about fruits. They cooked a variety of pancakes using fresh fruits. Each group selected fresh fruits to use in their pancakes. The Red Bean group made banana nut pancakes, Crab Boil group made banana pancakes, Sausage group made apple and yogurt pancakes, Pepper group made blueberry and banana pancakes, Rice group made strawberry chocolate chip pancakes and the Milk group made chocolate chip pancakes. The pancake breakfast was accompanied by eggs, turkey bacon. The students really enjoyed putting their own twist on a breakfast favorite.

NOW WE'RE COOKING
Today was the day all the kids had been waiting for, they cooked!! Each group was responsible for making a component of the meal. The groups helped one another in prepping and preparing the meal and everyone got taste everything the other groups cooked.

Growing our own Herbs
Today the students were delighted to have the opportunity to start growing their own plants. Mrs. Mila Berhane did a brief presentation about the different herbs and how they can grow them from home before the group ventured outside to see what awaited. Mrs. Mila a Senior Research Associate here on campus at the agricultural center provided a more hands on presentation where the students were able to select from about 40 different herbs that they would like to plant. Each student was given the opportunity to smell and even taste some of the herb grown right here on campus. Each student selected a plant of their choice and was able to take it home to care for it. We are encouraging the kids to grow more herbs now that they know the different uses for a variety of plants.

Got to stay fit!!!!
Everyday after the kids have cleaned their plates and their areas they return back to Southern Laboratory. In returning they work out daily with Ms. Marshall and other staff. The kids are involved in team sports like basketball, kickball, and baseball but it always start with a quick warm up lap to get the blood pumping.

Taco Salad Wednesday
Today the kids were able to interact in their groups by creating chef hats and place mats. Each child was asked to be completely original in creating their hats and place mats by drawing all of their favorite fruits and vegetables. Later the students enjoyed a healthy lunch of taco salad, made with ground turkey (a leaner, healthier meat choice) and couldn't even tell the difference between it and ground beef. The taco salad was accompanied by a fruit salad with berries and bananas in a plain yogurt sauce.

1st DAY!!!!!
During the first day of the "Cook Like a Chef Camp" on Southern University's Campus the campers were actively involved in activities to help them better understand the purpose of the research. The participants were able to fill out surveys, and each had their height and weight taken. During this summer experience the youth will learn how to make better eating choices and things they can do to live a healthy lifestyle. They will also learn the correct ways to prepare and cook a variety of foods. So Parents, be prepared for them to start making YOU dinner for a change!
